Halloween Pumpkin Punch

This one is a KHOU Great Day Houston (and now website) exclusive. You won't see it in my best-selling cookbook, however my book has, of course, a frightful number of other great Halloween recipes for you to stir up in your cauldron!

Halloween Pumpkin Punch

Serves a small party of 12

 

1 medium "pie" pumpkin, not a large "field" pumpkin

Apple cider (about a liter)

Cranberry juice (about a liter)

Ginger ale (about a liter)

Rum (or vodka, as desired)


Extra credit: add spooky dry ice! NOTE: Dry ice can be dangerous. It is extremely cold, many many times colder than regular ice. Never handle with bare hands, only gloves. Do not store in your freezer, it gives off carbon dioxide and could shut the freezer down, or even explode the fridge! Sounds like fun stuff, eh? Store it in a cooler with the lid slightly ajar. Do not use in an unventilated area. It is safe to consume once is entirely dissolved. Make sure it has entirely and fully melted away before you enjoy your drink. Be especially careful to keep away from children.

 

Cut "lid" out of top of pumpkin and empty it, smoothly scooping out seeds and "guts". (Use the guts to make my Great Pumpkin Hummus and toast the seeds to top it! The roasted seeds can also be a tasty cocktail-time snack to go with your punch!*)


Using equal portions cider, cranberry juice, ginger ale, chill for an hour then fill (and refill) pumpkin. Of course, add ladle.

 

As desired, spike with rum if you're having an adult party, or serve rum and/or vodka on the side so adults can spike themselves.

*Heat oven to 350°F. On cookie sheet, spread seeds. Spray or brush with olive oil. Sprinkle with garlic powder, salt and pepper, paprika. Roast 15 minutes, tossing them every 5 minutes for more even roasting.
