Grim Reaper Chopped Salad
Makes 4 to 6 servings
1 pound (about 20) shelled and boiled shrimp, tails removed
3 cups romaine lettuce in 3/4-inch strips
1 cup halved grape tomatoes
1 cup haricots verts, cooked and cut in 1-inch pieces
1 orange bell pepper, diced
1/2 cup finely chopped red onion
3/4 cup crumbled blue cheese (3 ounces)
1/2 cup fresh basil in thin strips
1/4 cup red wine vinegar
2 tablespoons fresh lemon juice
2 teaspoons salt
Freshly ground black pepper
1/4 cup olive oil
In a large bowl toss shrimp, lettuce, tomatoes, haricots verts, bell pepper, onion, blue cheese, and basil. Whisk together vinegar, lemon juice, salt, pepper to taste, then whisk in oil. Pour dressing around the inner rim of bowl, then toss salad, lightly coating with dressing from bottom of bowl. Chill for 10 minutes and serve.
