A nut roast! It sounds a bit menacing, even grim, but perhaps not entirely bad. If you can get the right umami and not overbake it, it might even be somewhat appealing. I would add a bit of baking powder and cornstarch (or arrowroot) to keep it softer in texture, perhaps even a tablespoon of brown sugar to complement the salt and other seasonings.
