Once Upon a Menu: Tipsy Cake
This cake isn’t drunk… but it’s definitely tipsy!
Angel food soaked in sherry and bourbon creates one boozy trifle that'll get your party started.
Great for any season, but I've made one here for Christmas, with green vanilla pudding, whipped cream, pistachios, red goji berries, and other festive toppers.
Don't let Uncle Melvin eat too much or you might have to call an Uber!

Tipsy Cake (aka Boozy Trifle!)
Makes about 8 servings
1 box Angel Food Cake Mix, plus water
1/3 cup dried goji berries
1/2 cup sweet sherry, divided
1 package (3.4 ounces) instant vanilla pudding mix
Gel food coloring (preferred color)
2 cups whole milk
3/4 cup fig spread
1/4 cup bourbon
1/3 cup toasted pistachios, roughly chopped
1/2 cup praline pecans, roughly chopped
1 cup heavy whipping cream
Flake salt
Prepare and bake cake according to package directions. Cool completely.
Meanwhile, in small bowl, combine goji berries with 2 tablespoons sherry. Let stand 20 minutes; drain.
In medium bowl, prepare pudding with milk according to package directions. Stir in gel coloring as desired. Chill until set.
Slice cake into sections. Spread cut sides generously with fig spread. Sandwich layers back together. Cut into generous chunks.
In 2 to 3-quart glass serving bowl or trifle dish combine ingredients in layers. Be creative! You can start to sprinkle with berries and nuts in between layers at this stage if you’d like, as well.
Spread pudding, add cake sections. Combine remaining sherry and bourbon. Spoon half over cake. Spoon more pudding as desired. Repeat with remaining cake, sherry-bourbon mixture, pudding. Cover and chill 4 hours or overnight.
Before serving, whip cream to soft peaks. Spoon over cake. Scatter with goji berries, pistachios, and praline pecans. Top with decorative holiday food or flag picks if available and desired. Finish with flake salt.
