Ann-Margret's Orange Chicken

C'mon everybody, let's try this waistline-friendly recipe from Ann Marg-rock, er, Margret! from Habilitat's Celebrity Cookbook, 1978.




ANN-MARGRET'S ORANGE CHICKEN


6 chicken breasts

1 (12 oz.) can orange juice concentrate

1 t. ginger

1 t. allspice

1 T. butter

1 (6 oz.) can mandarin orange slices

Salt and pepper


Bone and skin chicken breasts. Salt and pepper and bake in a pyrex dish, top side up, for 1/2 hour in a 350 degree oven.

Meanwhile, mix orange juice concentrate, ginger, allspice and butter in saucepan. Stir over low flame until well blended. When chicken has baked for 1/2 hour, pour sauce over it and return to oven for an additional 1/2 hour, basting occasionally.

Five minutes before removing from oven, place mandarin orange slices on top of chicken breasts and return to oven.

Serve over rice with a green vegetable and salad.

Serves 6.
