Ghoul Fuel Spectral Spinach
Makes 6 servings
A side course of supernatural energy!
1/2 cup (1 stick) butter, divided
2 teaspoons salt, divided
2 pounds crinkly Savoy spinach, stems removed
1/4 cup chicken or vegetable broth
2 tablespoons flour
1/4 cup instant diced onion, or 1/2 shallot, minced
1/2 teaspoon garlic powder
1/2 teaspoon nutmeg
1 teaspoon coarsely ground pepper
6 ounces pepper jack cheese, in small cubes
2 jars (4 ounces each) sliced sweet pimentos, drained
In large high-sided skillet, over medium heat, melt half a stick butter & 1 teaspoon salt. Wilt half the spinach (about 4 minutes) but let it keep some of its spring. Repeat with remaining half stick butter, 1 teaspoon salt and second half spinach. Collect spinach without it's 'liquor' in a large bowl to the side.
Get ready to stir: to skillet over medium heat add broth, flour, onions, garlic powder, nutmeg, pepper. Stir briefly till smooth and thick. Add spinach, stir. Add cheese and melt. Throw in pimentos, coat all with sauce. Stir together for 5 to 7 mins to fully heat spinach.
