This recipe combines solid family nutrition with creativity. One of my favorite duets.

The recipe! I have not tested it personally but it appears to me to be pretty solid. I would definitely opt for high quality instant potatoes in your favorite flavor.

Meat Loaf Train
SERVES 8-10
Just the dish to enchant the youngsters at any party.
1½ pounds ground chuck
½ pound ground lean pork
2 cups dry bread crumbs
2 eggs, well beaten
1½ cups evaporated milk
1 small onion, grated
2 teaspoons salt
2 tablespoons Lea & Perrins Worcestershire Sauce
Mashed potatoes
2 raw carrots
Cooked vegetables
Combine all ingredients except the potatoes, carrots and cooked vegetables. Blend well. Cut mixture into 8-10 pieces. Shape each piece into a small loaf, with a small hollow at the top of each loaf. Shape one loaf into an engine shape. Place loaves on a well greased shallow baking pan.
Bake at 350° F. for 30-40 minutes.
Spoon hot mashed potatoes on a platter. Place meat loaves, starting with the engine, in a row around the platter on the potatoes. Connect cars with a strip of raw carrot. Use pointed end of carrot for a chimney stack. Cut thin rounds of carrot for the wheels.
Garnish with parsley. Spoon hot vegetables into each car. Serve hot with plenty of raw crunchy vegetables, catsup and rolls.
