Once Upon a Menu: Salisbury Steak

Once there was a steak called Salisbury! Dr. James Salisbury, that is. He famously prescribed a medicine he oh-so-charmingly called “muscle pulp of beef.” Jail. Immediately. I’ve improved the prescription: mushrooms, caramelized onions and a flavor-packed Café de Paris gravy. Take two helpings and call me in the morning!

Salisbury Steak de Paris

Serves 4

 

1 1/2 pounds 80/20 ground beef

1/2 cup fresh breadcrumbs

1 large egg

2 tablespoons Worcestershire sauce, divided

1 teaspoon salt

1/2 teaspoon freshly ground black pepper, plus more to taste

2 tablespoons butter, divided

1 medium sweet onion, thinly sliced

8 ounces cremini mushrooms, sliced

1/2 cup dry white wine

1 1/2 cups beef broth

1 teaspoon Dijon mustard

1/4 cup heavy cream

2 tablespoons chopped flat-leaf parsley for garnish


In medium bowl combine beef, breadcrumbs, egg, 1 tablespoon Worcestershire, salt, pepper. Form into four thick “steaks.” 

In large skillet over medium-high heat melt 1 tablespoon butter. Add steaks, brown well, about 3 minutes per side. Transfer to plate. 

Reduce heat to medium-low, add remaining tablespoon butter, sweet onion. Cook, stirring, till soft and caramelized, 12 to 15 minutes. Increase heat to medium-high, add mushrooms, cook till softened, 5 to 7 minutes. 

Add wine, scraping browned bits from bottom of skillet, cook till reduced by half. Add broth, Dijon, remaining tablespoon Worcestershire, simmer 4 to 5 minutes. 

Return steaks to skillet, reduce heat to medium-low, cover, simmer 8 minutes, flipping once, till just cooked through. Stir cream into sauce, simmer 1 minute. Taste for salt and pepper. 

Serve over buttered egg noodles or with mashed potatoes and a nice green vegetable. Spoon sauce over steaks, garnish plate with parsley.
